Easy Vegetable Pizza
4 large whole wheat pitas
2 cups pasta sauce (no or low salt--no sugar)
1/2 cup shiitake mushrooms
1/2 cup red onions, chopped
10 ounces frozen broccoli florets, thawed and finely chopped
1 cup non-dairy shredded mozzarella cheese
On rimmed baking sheet, bake pitas at 200 degrees for 15 minutes. Spoon on pasta sauce and sprinkle with mushrooms, onions, and broccoli and cover lightly with cheese. Bake in the oven at 200 degrees for 30 minutes.
